Puyallup Fair Food: Bacon Avalanche

New this year is the pairing of bacon and ice cream from the Marcoe Candy Company folk.

The family known for candy apples, ice cream, chocolate and other fair sweets is introducing a new delicacy this year: Bacon Avalanche, an insane mixture of salty and sweet, bacon mixed with Dreyers vanilla ice cream and topped with real bacon crumbles.

“I know it sounds weird,” said Robbie Marcoe, manager of one of the family’s booths. “We take soft serve ice cream with seven percent butter fat and add bacon. It’s really good.”

Robbie didn’t come up with the idea; another company employee gets that credit, but he was a champion of the new dessert from the start, having to lobby other family members hard on the idea. He said people in the company were split down the middle on the marriage of bacon and ice cream.

“I had cousins who were like ‘No way that is going to sell’ but then half of them were totally on board,” he said.

Others commented that it could be eaten for breakfast, not just as dessert. The mixing of ice cream and bacon is not unheard of. UK celebrity chef Heston Blumenthal created bacon and eggs ice cream in 2008 for his restaurant, Fat Duck. Since then, chefs on the Food Network and other celebrity chefs have come up with their own versions of bacon ice cream.

The secret to good tasting bacon ice cream, according to Marcoe, is in using smoky-tasting bacon.

"This is the best bacon, when you open the container the smell just instantly gets your mouth watering,” he said. “The hardest thing is to not eat it all yourself—it’s seriously that good.”
