Calling All Pancake Lovers! Even YOU with the food allergies and sensitivities!

Get ready to flip over my latest pancake creation! ;-) Quick, easy and healthy for you, even if you have food sensitivities or allergies!

Breakfast is the most important meal of the day. That's what they always tell us anyway. Whether you are sending kids off to school or just yourself off to work, you want to start the day with a healthy breakfast, right?

Pancakes are always fun and flat out delicious to eat! Did you see what I did there?  I love pancakes. I am giddy just thinking about them. I think I'll make some, right after I finish typing this out, so you can go make some too. These puppies are a hit with the entire family. You can make them to serve immediately or you can freeze them in a zip bag for later use. Simply pop them in the toaster and serve with your favorite pancake toppings. 100% Maple Syrup, Chocolate, Fruit Jam or jelly, Island Apiaries Raspberry Honey from the . Think outside of your pancake box and pack yourself or your kids a sandwich using these pancakes instead of bread. Peanut Butter and Jelly sandwich with pancakes instead of bread. If you can't have nuts or attend a nut free school or work, try Sunbutter and jelly or Sunbutter and honey or Sunbutter and chocolate chips. Ahhh. 

Banana Flax Pancakes

Gluten free, cow's milk free, egg, soy and nut free.

Makes 16 pancakes (1/4 pour of batter)

Ingredients:*

1 banana
1 tbsp. vanilla
2 tbsp. flax meal
2 tbsp. olive oil
2 cups So Delicious Coconut Milk
2 tsp. lemon juice
1/2 tsp. salt
1 tsp baking soda
2 tsp. baking powder
2 1/2 cups Bob's Redmill All Purpose Gluten Free Flour
(optional: Earth Balance for pan or for on pancakes. Soy free if you have trouble with that.)

*All of the ingredients can be found at our local or Stores.

Directions:

1. Add all the ingredients listed above, starting with wet and ending with dry, into your blender and blend until smooth. You may need to blend ingredients seperately as you go with a regular blender. I use a Vitamix which gets the job done almost instantly. Once it's blended, you can put the batter in the fridge to chill or just set it on the counter while you heat up your favorite frying pan to medium heat.

2. I put a little Earth Balance, about a 1/2 tsp. in the bottom of your non-stick pan for the first pancake. Once it bubbles, you know the pan is hot enough to start cooking your pancakes.

3. Pour 1/4 cup of batter in the non-stick pan per pancake. Wait until you see bubbles form before you flip the pancake with a spatula. If bubbles don't form, your pan isn't hot enough.

4. This is what your pancakes should look like when you flip them over. Cook on the other side until cooked though. You will get a feel for the timing after your first pancake. Warning: The first pancake is usually your tester to see if your pan is hot enough or to hot.

5. Serve up your pancakes as your imagination sees fit.
